Our Story

Three Generations
in a Food Truck

La Minerva started as weekend gatherings in a driveway — family, friends, and the kind of food that makes people stop what they're doing. Our recipes traveled from Oaxaca to Colorado Springs, adapted to the mountains but never diluted.

Today we run a truck, not a franchise. Every marinade is mixed by hand. Every tortilla is pressed before it hits the plancha. We keep the menu small because we'd rather do four things perfectly than forty things adequately.
